The bead and cove:
Gives you more glue contact surface.
"Holds" the strips in place when glue is wet.
AND as you stated everything is twisted so if you used flat strips you would need to fit (i.e., sand, cut, trim, plane) each and every piece for its entire length. The bead and cove is semi self adjusting (less fitting).
P.S. Epoxy....not carpenters glue
