If you're serious about the touring, get a 17LT or even a Chesapeake 18. The Pax isn't really conducive to internal loading with it's very low aft deck. If you check out the comparison chart, the max paddler weight is 175 and so is max load. The 17LT, however, has a max paddler weight of 220 and max load of 300. The Chessy18 has a 270 max paddler and 350 max load. You can chop this a little to have the length of the 18 and a slightly lower volume (CLC may or may not make an 18 LT, I can't remember) if that isn't necessary.

You may be able to put a decent amount of gear in a forward hatch of the Pax if you put one in (and you're not totally overloading the boat), but CLC doesn't sell hatch kits for these. That doesn't make it impossible, just more difficult. Loading with a lot of gear in the bow and none aft will certainly affect performance characteristics a bit.
