PAX 18 for Touring

I've recently paddled an 18ft sea kayak 50 miles across lakes (a fibreglass one which seemed to weigh a tonne) but I felt limited by the top speed a little. I'm dying to get into building my own boat, but I'm torn between a PAX 18 and a Chesapeake 17LT. I'm fairly experienced and find that boats others say are wobbly and unstable are usually more than acceptable to me. I'm interested in being able to tour for perhaps 3/4 days at a time, self sufficient, with a group of friends.

Reading about the two different boats I'm haven't seen any hatches installed on the PAX models (just a day hatch once I think). I was wondering if anyone had built one and installed bigger deck hatches in the bow and stern, or had paddled both models and could offer any opinions/advice as to which could be the better model for me...
