varnish/paint

hello, I posted a note before about the sassafras 14'. I am almost finished. I was just wondering how many coats of epoxy are needed underneath a paint finish? also, do you need to varnish over the epoxy on the inside of the boat. i have used the no bush hardener that is suposed to be UV stablized. i followed the advice about the fiberglass and so far the boat looks great. thanks in advance, Pete.
