Don't count on the fiberglass helping to smooth an unfair boat. After adding the fiberglass, you'd have to build up with a lot of epoxy, which is far more work than sanding and makes a heavy boat.

A fairing board, or 'long board', with 60 grit and a random orbit sander should make quick work of it.
