passagemaker - when to epoxy the interior?

Hello fellow builders,

I'm just finishing up glassing the interior bottom of my Passagemaker Dinghy.  The photos at this step clearly show that the remaindor of the interior is not epoxied.  

Reading ahead in the manual, the next steps are 1) prepping the exterior bottom for glass, 2) glassing the exterior bottom, 3) trimming the transoms, 4) building, then 5) installing the daggerboard trunk.  The photos during the installation look like most (but not all) of the interior is epoxied.

Did I miss a step?  When should the the top planks of the interior should get epoxied?  And, should it get 2+ coats of unthickened epoxy, like the exterior?
