"Overcoating"

The Interlux finish paint ("Toplac") we are using on our Passagemaker Dinghy has some seemingly conflicting directions. The instructions on the can first say to sand between coats. Further down on the label, the instructions say that you must sand between coats if the next coat is not applied during the "overcoating" time window. The overcoating time window is defined in a table that shows various time ranges depending on the ambient air temp (e.g. 6 hours to 2 days @ 75 F).

Can anyone shed light on this? Perhaps I have misunderstood the meaning of "overcoating"? Thanks.
