Refinishing

I built a Cape Charles in 1997 and at the time painted the hull. Now I would like to take the paint off and go natural. What care should I take in doing this? I worry about sanding down to the cloth. I plan to through a couple of coats of epoxey on the whole boat and then a few coats of varnish. I would appreciate any thoughts or tips.
