adding hatch

My girlfriend has a completed 16 foot Cape Charles kayak with no hatches. Would like to add a flush hatch kit. Please advise on what materials are included with the hatch kit, what are the steps of the process. Any suggestions for solving problems that might come up. The deck is the natural marine plywood which has been stained and varnished. Recommendations? Should I be looking at other hatch design kits? Also interested in installing the rudder kit. Please advise on this process as well. Thank you, Larry
