I varnished both of my kayak outside and they turned out pretty good, the hardest part was waiting for a calm day (i live in a windy area). I tried to varnish early in the morning as the bugs seemed a little less inclined to commit suicide.

The finish isn't perfect but they turned out pretty nice, and they pass the 10 foot test with flying colours.

The picture below is the area i varnished the kaaks in, no plastic spray booth and no wet area around the kayak.
