Varnishing outside?

Any advice on varnishing outside (mid Atlantic)? There's a roof overhang that, combined with hanging plastic, can provide reasonable protection, but keeping dust totally out in any serious wind would be difficult. Obvioulsy, there is no humidity control. Is your answer the same for painting? (I'm not a perfectionistic, but don't want to do anything stupid in the rush to get into the water.)
