On mine, I let the sheer clamps go long. Then when I stitched up the hull, I cut them close to the angle they would be to meet together. Then I was able to hold them together tightly and place a handsaw right down the middle and saw it through. Then close it as much as I could again and repeat. After a few passes, the seam was perfect.

What you're doing when you saw down the middle holding them tight is removing material where they touch, and not removing any material where they don't. So eventually, everything touches and looks crisp and nice.
