I chose not to sand in between epoxy coats because I wanted to evenly cover the glass. I had no problems with my final sand once I had completed all the coats, before varnishing, and I was able to make the epoxy pretty even in the process. If you are going to sand I would think you should be careful to get all of the dust off before your next coat. I don't know where you live, but my epoxy seemed to go on a lot more evenly in warmer temperatures - something to keep in mind if you're experiencing varying spring weather.
