Take a look at Octopus' accessory hatches. I wouldn't put one thru the deck of my Ches18LT, but if you moved it onto a neoprene spraydeck it would fit your bill. A few years ago, Sea Kayaker magazine had a do it yourself story about putting a Beckson Deckplate into a sprayskirt. What caught my eye was the ability to pump out a swamped cockpit in heavy seas with the sprayskirt in place. Lots of customizing possibilities with this approach.
