Tom...I eliminated the taped seams and glassed the entire cockpit area with 1 piece of 6oz. glass and 2 coats of epoxy. I taped only the seams in the fore and aft hatch areas. I think glass provides the needed abrasion protection for all the activity and movement (seats, feet, gear, paddles, dog) in the cockpit and it also looks cleaner than 3" taped seams.
