Louie,
Changing the form spacing is actually quite easy. The only real tricky part is the endforms. Nick Schade of Guillemot Kayaks gives a few methods in his book "The Strip Built Kayak". Come on over and I'll talk you through it with some of my home-brewed Scotch Ale, or if you wait a few weeks, some of the American Brown Ale that I'll be bottling tomorrow night.
A Redfish Silver might be a good choice too, or a custom-built greenland SOF.
Pictured below; my Night Heron (puzzle kayak), my wife's sof (yellow 15.5'x21"), and my low volume sof (brown 17.5'x18.5")
