Sanding to 220 should be fine. I wouldn't go any finer before another epoxy coat.

You probably already know this but one of the tricks to getting very thin coats of epoxy is to mix very small batches - may 2 oz. max. This is even more important in hot weather. As the epoxy kicks off, it becomes increasingly dificult to roll it on fast and very thin without using a squeegee.
