You need to sand to give the surface some "tooth" for the varnish to adhere to. Don't worry, the varnish will bring up a rich bright finish in the end. As for grits, use what you need to get efficiently to a smooth 220. If you have a lot of runs and bumps, start by using a sharp paint scraper. I agree that 80 grit sounds a bit aggressive and would need a light hand on the ROS. I scrape and then go straight to 150 then 220.
