curing/paint question

Okay, I'm getting to the end now, and by the weekend I should be totally done with the boat except for the paint. So...
How long do I have to let it cure before I can paint? Should I put it outside to help it cure?( not in the sun?) Its been in the 80-90's here in Pa and will continue to be.
And once I do paint, how long should the paint cure before I hit the water?
Also, could I sneek in a few hours of paddling in it before I paint? Is UV damage a concern? Or would I be better off to wait the extra few days?
