I comment with only second-hand knowledge, but my understanding is most yak builders leave the insides unvarnished and unpainted. The inside isn't visible in use, and only the cockpit is usually exposed to UV rays and weather.

In other open boats, of course, paint is traditional as being more durable and better-looking (and easier to touch up in my limited experience.)
