Good for you, trying out your boat in challenging but not dangerous conditions. I've never paddled a boat like yours, but the broaching you describe sounds nearly universal in following seas. This is one place where a rudder is a real help. Without it, your paddle must perform that function, using forward sweeps, reverse sweeps, stern rudder, bracing. Read, watch videos, join a kayak club, talk to folks, take some paddling courses, and continue to gain experience. Happy paddling!
