My 2 cents worth-

1) Definitely leave the hatches until after the deck glass but outline your hatch position with a marker before you glass the deck. Make a good mark to see thru the glass and then just wet out an inch or even less inside the hatch line to save epoxy. Also, its cleaner - don't have to worry about epoxy dripping into the boat while you fill the deck weave. I put newspaper inside the cockpit to catch any drips there but noe came thru on the first wetting out.

2) Here's foolproof dam solution that only add one extra nites wait. Roughly trim a small permanent dam out of extra leftover plywood and fillet it into the bow and stern dam positions. It should be an arrowhead shape to fit up the the top of the shear clamps. Gaps in the ashape are fine since you fillet it in. Then the next nite, pour in your thickened epoxy for a completely stress-free lightweight endpour (I used epoxy really saturated with microballons almost to a paste spooned it in, makes for a really light endpour).

Good luck!
