In a boat stored out of the water, Bronze/brass (or stainless for that matter) doesn't make a great deal of difference.
Bronze is the best though - strongest, most "water compatible" and looks saltiest.
I haven't built a yak (I'm a Canadian/ Sassafrass junkie), so I have no idea what fasteners you need, but Jamestown Distributors and has a good supply of bronze stuff (and will mail order), and talk to Rollin Thurlow (world famous canoe-builder-maestro) at Northwoods Canoe - he has a few different types of bronze carriage bolts etc. He's always been happy to throw a few (or a few dozen) in an envelope and lick a stamp... .
