Mike,
Most local suppliers sell "Handi Panels", that is 1/8 to 1/4 a sheet of plywood in all thicknesses. I had a piece of 1/4" oak ply that I used for my recessed hatches on my WR 18. Any 1/4" stiff will work, just reinforce it with a layer of 4oz cloth when all the spacers and lip are glued in if you're worried about strength.
