UV Protection

I've read here and elsewhere that it takes at least 3 coats of varnish for proper UV protection of the epoxy. Upon removing my hatch covers on Saturday, I noticed that the wood normally covered by the straps is noticibly lighter than the rest of the hatch. With proper protection I should not get "sun-staining" of the wood, right? Just wanting to make sure it's not normal before going through the trouble of setting up a clean space to varnish in. For the record, I used the Interlux Schooner varnish.
