The rubber mat sounds like a sea anchor to me. The sacrificial strip would help when dragging along the concrete boat ramp, but not for the pointy rock. You also have to consider each strip as skeg that will affect handling.
I like Laszlo's idea of just going for it and dealing with any damage, if any, later. Just plan your yearly maintenance after this annual event. The most damage to my boats occur during the loading/unloading and launching process which is required for every trip. What happens once in the water is minor.
