Backwards test

Matt - not to be a wise guy, but the hatches are designed to keep water out, not in. Don't obsess - give it a proper test by getting upside down in the water. Pressure of the water will tend to seal the hatches better, I think. My Chessie hatches are more waterproof than most commercial boat's hatches, and that's with 5 year old foam on them. That said, no hatches are completely waterproof (well, maybe Valley hatches) - that's what dry bags are for.
