Matt, I have not done this with varnish, but I have recently used 'flat' paint on a lapstrake rowing boat and it looked good. I would expect the wood grain to be more visible without the distracting reflections, The difference might be too subtle to show up in photographs, though. As far as slipperyness in the water goes, a slightly matt finish is supposed to have less resistance than glossy, according to the test-tank gurus. Something to do with boundary layer stablility or some such. Wen I raced dighies, we used polyurethane gloss paint begause of it's hardness, then rubbed down the final coat with 600-grade wet and dry for that magic finish.
