SOT Hull Shape?

Whats the scoop with the shape of the SOT's hull? Why is a SOT destined to have that sort of shape, makes it look like a wooden plastic boat. Why couldn't you just modify the plans of say a C14 and modify area between bulkheads to make it an open cockpit SOT type with the same hull performance you'd get with the sit in kayak? I am probably to stipid, but it makes sense to me.
