I ran into that same issue on the mc 16.5 as did some others. The folks at clc say start at the point while some others talk about centering. It seems either way you will be filling in or trimming. I filled in at the stern with epoxy and wood flour and it turned out to be a very small gap to plug...not a big deal. I think it most important that you line the panels up even at the bow and take your time "fairing" the curves that has been my issue. It really helps if you can step back form the boat and get the big picture.
