Fairing boards are attractive for several reasons. First, they're quieter than an ROS. Second, with an ROS the temptation is to lean on the edges to take down bumps, which results in crescent marks. This is next to impossible with a fairing board.
Finally, the long throw of a fairing board ensures that when you make your hull all uniform white that you have not done it by walking your 5" ROS down and up 7" valleys.
