I like your method.
My opinion is the kayak plans and kits should show two different seat locations, one for a ruddered kayak and one farther back for no rudder. Too many rudders and skegs have been added to kayaks only to manage weathercocking. And adding a rudder to a kayak design that was wind neutral would make it leecock and then require active ruddering to keep the bow into the wind, and even worse condition.
