Sanding varnish reqt's

I just sprayed my first coat of Varnish and man does it look great!
So now I'm on to wet sanding to 320grit. Is this absolutely required? If so, why? Is it becuase another coat of varnish will not "stick" to this glossy coat....or, is it just a step to smooth the surface, sanding out any dust or orange peel, fisheyes, etc.? Surprisingly, I have almost no dust in the finish at this stage.
I'm curious as the spraying and the sanding both take a day. But I'm running out of time with the weather and a couple of Christmas projects that I have to do. I hate to put the boat up for the winter at this stage...
I've painted cars before and we've only wet sanded and buffed the last coat to get that mirror shine.
