As long as the containers were sealed there "should" be no problems with 2 year old epoxy.
The 6 month shelf life is probally an RMA (Reliability, Maintainability, Availability) of of something like 99.9999% Your epoxy may no longer meet milspec but you should be ok for civil use.
You will not see much heat unless you mix a big cup, say 6-8 ounces.
