Saw horses work. Epoxy, water or wiper fluid jugs work (can't say one works better than the other). Barbell plates. Beer kegs. Lots of high tech solutions!

Psst. Don't tell anyone, but I've built about ten kayaks and none have really fair, true keels. Not a complaint yet.
