I doubt it would do much for stability or turning. It may help reduce the effects of weather cocking in cross and head winds, as well as improve tracking to make paddling a bit easier.

A retractable skeg is usually preferrable to a fixed skeg in a boat that may be beached, but the location of a skeg trunk for the retractable skeg in an open canoe may be a problem.
