Steven, I smoothed and sanded all my chine seams by hand with a block sander and 150 grit after filling the few small gaps with wood flour epoxy.

You are going to end up with a seam that is different in color regardless unless you beveled the panels before stitching. So the best thing to do is aim for a consistent width the length of the boat.
