how well will the wood duck double work as a single. My wife goes with sometimes, but not always. I don't want to have to build two kayaks.

I don't have a Wood Duck Double, but one of the advantages of boat building is customizing. I am sure that with a single seat in the right place the double will handle well as a single. You will need to work out the correct position for the seat. Should be fun - show us your results!

At risk of complicating your question...
The microbootlegger is another option. It's designed as a double but the CLC literature claims it functions as a single quite nicely- though I can't speak to this myself. It's a stripped kayak (versus stitch and glue for the Wood Duck) so that may be a deal breaker for you, but it's a real looker!
I'd reach out directly to CLC- might be tough to find someone who can speak to the relative merits of each.
