I am building a Sassafras 12 and this weekend I cut the thwart. After I put the thwart into position, I measured the beam. The beam on my canoe turned out to be 27 3/4" instead of the 28" beam of the plans. Is this within tolerable guidelines? or Should I make a new thwart?

Oh heavens, yes. If you measured all the boats in our showroom you'd find more variation than that...
We commissioned a builder to assemble a demo model Sassafras 12 for us. He built it with the beam at 24" instead of 28". Now THAT was a no-go. The boat was cut up to create a set of (very expensive) full-scale cross-sections of stitch-and-glue construction. The builder found a new job.
