When viewing photos of someone building a nesting pram, I noticed he was filleting the rabbits after they had been epoxied. Is that correct? Has anyone ever added this extrra step and if so, why?

Not sure what you mean. Which step? Are you talking about the lapstrakes on the bottom exterior? I deviated from the plans significantly by "tacking" all parts together with short, small radius fillets between stitches, the removing the stitches (in my case stainless seizing wire), then going over the tack welds with a larger radius, continuous fillet. I think everyone should use the the tacking method on all stitch and glue, as it provides a lot more opportunity for success.
