im figuring how long ive got left till the boat hits the water . im using interlux high gloss at 80 dregrees. about how long does it have to dry till i can flip it on the stands and do the other side and how long till i can sand and recoat?

Interlux says you can recoat in 8 hours. I varnished my Shearwater in 60 degree weather and found it needed twice that time to recoat without gumming up the sandpaper. Give it at least 24 before flipping it over. It takes about two weeks to fully harden.
