I've seen it done and it's a beautiful finish. The only problem is this: if a boat is varnished and gets scratched with use, and it will, just a light sanding and a new coat of varnish makes it look new. If the same is done with clear coat, and it will, it's much harder to take care of the scratches. If you still decide to go the clear coat way make sure you get at least 10% UV inhibitor to protect the epoxy. Twenty % is better.
