small boat question

Which boat is more stable? One with a flat bottom or one that has a rounded bottom? Some Canoes, for instance, have an approximate 1 inch rib down the bottom of the center of the boat (I'm talking beneath the boat) and I was wondering if this might be for performance or it is for stability in the water.
