I didn't use foam blocks, but instead clamped a length of sheer clamp to each side of the boat (two fore and two aft) and then clamped them to the saw horses, raising the keel off the horses an inch or so. Then placed the level across the bow and adjusted the clamps till level. Did the same for the stearn. Checked the boaw and re-adjusted a bit. Checked the stearn. When both were level I made sure the clamps were tight keeping the hull straight for filletting. So I really can't say how accurate the foam blocks need to be. Just make sure the hull doesn't move after you straighten it.
