LT17 Deck Trimming?

Can anyone explain to me if there is a benefit to using the trimming guide to run a pencil line along the top of deck of my LT17 instead of just working with the keel facing up and triming the excess deck from the underside? That way I know I'm not going to ding the hull with my pull saw. (This seems to be the way it's done in Kulczycki's "New Kayak Shop")
