Here in the Colonies the DIY hardware stores sell hinged galvanized steel connectors which slide over the ends of 2x4's to make sawhorse legs. The upper ends are toothed to bite into the crossbar. A few nails (or better yet, drywall screws) stabilize the whole thing. Tops, 10 minutes to build a sawhorse. It isn't pretty like Rocko's, but it works. Maybe something similar exists on your side of the Pond?
I added a pair of removable verticals for each horse and ran some nylon webbing to actually support the boats. The set in the picture is over 3 years old and has been used for multiple boats (as well as a trestle table for a block party).
