Varnishing canoe seat

I'm building a Sassafras 16 and am looking for suggestions on varnishing the cane seats that come with the kit. Not sure if I should leave them as they are or try to mask them and varnish the rails. Also wondering if anyone has tried to varnish the cane. Same with the thwart. I would like to leave the light colored wood, but think I also need to protect it with varnish.

Thanks for any suggestions. (I'll post a photo when I finish. I have strips left over from my hybrid Mill Creek and will try to make a strip decks on the Sassafras.)
