"watertight integrity" is a wise choice. I have yet to talk with anybody who says their flush wooden hatches are 100% watertight, regardless of the hold down method. A little water in the hatch might not be a real big deal but it is so nice to have them completely dry... I stopped using dry bags for your typical day trip. I do lots of rolling and playing in waves and everything stays dry. I cant detail the wooden shim method for you but you might look up Jay Babina (jason designs or outer island kayak) I know he uses a method like that.
