What you need is a rudder that will be, mathematically, the right size for the sailrig. If you know what the size is that you need, you could expand the search and look at other small boats besides kayaks (opti's, hobie, whatever). There are a ton of small craft out there so it is likely that a rudder could be found that what satisfy your needs...like you said, no need to reinvent the wheel....
