Jeff...option 2 worked well for me. The 4 oz. glass adhered well around the rub rail radius and, as you suggested, I trimmed it just under the lower radius while still green. The masking tape and plastic protected the hull while glassing the deck. A little final sanding under the rub rail radius blended it in nicely.
